Oatmeal Caramel Apple Cookies

Very very poor. No flavour, I should have noticed that . After the first batch out, I decided to add a few ingredients to try and save them. I wouldn’t recommend these. There more like a very soft cake, which you can just use a cake mix. Disappointing ??
I added 1 tsp cinnamon and 1 tsp vanilla. Couldn't find caramel pudding so used butterscotch. These cookies stay moist for days, even after being frozen. I tried three different apple oatmeal cookie recipes and this recipe was the winner.

I MADE THESE COOKIES WITH A FEW CHANGES. I KNOW SOME PEOPLE HATE IT WHEN REVIEWS ARE WRITTEN WITH CHANGES BUT I AM GOING TO DO IT ANYWAYS! I FOLLOWED THE ADVICE OF OTHERS AND ADDED 1 1/2 TSP. APPLE PIE SPICE. I COULD NOT FIND CARAMEL OR BUTTERSCOTCH PUDDING MIX SO I USED VANILLA PUDDING MIX PLUS 1TSP. BUTTERSCOTCH EXTRACT. WITH THOSE CHANGES THE COOKIES WERE WONDERFUL AND VERY MUCH ENJOYED BY ALL.
I made these cookies last night. Mine had no flavor of any kind. The only substitution I made was butterscotch pudding for caramel, which was not available. There was no hint of butterscotch, apple, or brown sugar flavor. They were edible so I put them in an airtight container overnight, and just tried one. The texture was very soft, stale-like. Don't know what I did wrong, but I just threw them out.
I also used the butterscotch pudding mix because caramel wasn't available in my area. They were soft, had a lovely flavor, and packed really well for lunch boxes. For the earlier question, quick oats would definitely work in this cookie! They won't have quite as much texture and you might want to check the cookies on the earlier end of the time because quick oats absorb more liquid so they might otherwise be drier.
I have a question. Can I use quick oats instead of old fashioned oats? Not quite sure what the difference is. Also, I found the caramel pudding mix online, as I know it has been discontinued, so I bought 4 boxes.
These went over very well with my coworkers. Everyone loved the heartiness of the cookie and the flavor. I did substitute butterscotch pudding for caramel since my local grocery store didn't have the caramel.
Really good and very simple to make! I was concerned about finding the caramel pudding as I had never heard of it, but I found it fairly easily. I've made the recipe twice already and will very likely make it again! I got 28 cookies with my black-handled King Arthur Flour cookie scoop.
