Overnight Flax Oatmeal

Fans of the healthy benefits of flaxseed will enjoy this hearty oatmeal. It's full of yummy raisins and dried cranberries, too.—Susan Smith, Ocean View, New Jersey

  • 3 cups water
  • 1 cup old-fashioned oats
  • 1 cup raisins
  • 1/2 cup dried cranberries
  • 1/2 cup ground flaxseed
  • 1/2 cup 2% milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon molasses
  • Optional: Sliced almonds, whole milk and additional molasses


  • In a 3-qt. slow cooker, combine all ingredients. Cover and cook on low for 7-8 hours or until liquid is absorbed and oatmeal is tender. If desired, top with sliced almonds, whole milk and additional molasses.

    It was ok. The flax settled on the top and made a crust but it mostly mixed back in. All the raisins made it too sweet for my family. I doubled the recipe for my 6qt crockpot. I set the timer for 7 hours, then it switched to warm for 2 hours.. the oats were cooked well/good consistency. We ate it but I won't make it again.
