Peanut Butter Cookies

It is amazing how much flavor these simple peanut butter cookies without brown sugar have. I make them very often because I always have the ingredients on hand. —Maggie Schimmel, Wauwatosa, Wisconsin

    2 dozen


  • 1 large egg, room temperature, beaten
  • 1 cup sugar
  • 1 cup creamy peanut butter


  • In a large bowl, mix all ingredients. Scoop level tablespoonfuls and roll into balls. Place on ungreased baking sheets and flatten with a fork.
  • Bake at 350° until set, about 18 minutes. Remove to wire racks to cool.

      Very easy and tastes good. I baked for 15 minutes on convention bake on a Silpat. Maybe 2 were a little too brown, probably because they were a little smaller than the others. The rest didn’t burn at all probably due to the silpat. I had only minor spread so I was surprised to read a review that said they spread out a lot and were very thin. That was not my experience. I used crunchy peanut butter.

      Here in the middle of the COVID-19 quarantine, I was out of almost all baking ingredients, but I had peanut butter, Splenda, and eggs. I used this recipe,. subbing the Splenda for the called-for sugar. The cookies came out just fine and hit the right spot. Maybe peanuts are not only healthful but also a miracle ingredient!

      I just made these and they are excellent - 18 mins is right on - they are a little sticky to make balls but make them small with the tbsp. as the guide. You certainly don't need sprinkled sugar on top. I would give them a 4 1/2 rating.

      It was amazing, be sure to read all the reviews on how long to cook them. 18 mins is WAY too long. Also don't add sugar on top of the cookies until done. Just a failure on instructions part that's for sure.

      These cookies were very easy to make and tasted great. It's amazing that they contain only three ingredients! They come together quickly and were delicious.

      These cookies are really good and SO easy to make! Added them to my Christmas Cookie trays and they were a huge hit. Next time I'll double the batch! A great recipe to have all year round because you can throw them together at a moment's notice. And I always have the ingredients on hand! Baked them for around 15 minutes and they were perfect.

      I've made these for years. Sometimes I use crunchy peanut butter and sometimes I add mini chocolate chips. To those giving only one star because you burnt your cookies, perhaps your ovens cook hot. Also because of the amount of sugar, these should be watched for fast browning. I bake this recipe about 12-15 minutes in my oven.
