Pineapple RumChata Shortcakes

Made this a couple of months ago. LOVED the pineapple topping but the shortcakes were disappointing. Would definitely make the topping again but might substitute angel food or pound cake.
I’d like to make this. It sounds delicious. But I don’t want to buy jars just for this recipe. Anyone have an idea of another way to do it?
