Pizza Meat Loaf Cups

These were easy and quick to prepare, which I loved. I feel these needed more pizza flavor, maybe by adding some pepperoni or sausage. My kids dipped them in additional pizza sauce.
This was delicious! I increased the meat by 1/2 a pound and just added more of the binders. I would make sure you use a leaner meat because it can become a little greasy. I added diced up pepperoni to make it a little more like pizza. My thirteen year old loved it too! A real delicious family pleaser.
Great recipe...I made in mini-muffin cups for an appetizer party..the recipe will make apps 36 mini-muffin size. I added cooked sausage Italian seasoning and uses lean beef to address the grease comments....great recipe that can be modified each time..Thank you Susan!!
My husband and I thoroughly enjoyed these meat loaf cups! Iand#039;m always looking for new ways to use my homemade pizza sauce and this recipe worked perfectly. I used a pound of ground chuck instead of 1 1/2 pounds, so I reduced the ingredients slightly and made 8 meat loaf cups. A new favorite and something Iand#039;ll be making often!

These were very moist and definitely a friendly flavor for kids. However, I would add more seasoning to them next time, or incorporate a bit of sausage in the mixture, as another reviewer suggests. I can see how these would be good to make in batches and freeze for quick dinners for busy families.
These were very tasty, little treats. Changes I made were using my Sauce, (since I had it on the stove), adding a little garlic powder and crushed red pepper flake, and topping with a little Parmesan. Delicious. I suggest putting on a sheet pan under muffin tin, to catch overflow.
Pretty good! Cooked pretty fast and was very moist. I added garlic for a little more flavor. Tastes like a cross between a meatball and pizza. I might try adding a little more meat next time, though.
I'm going to definitely make these for my grand kids. I know they will love them made just as the recipe is written. For me though, I could have used a little more flavor. I think a 1/4 pound of Italian sausage and some oregano would do the trick.
