Plum Anise Jam

Good Afternoon I made this jam this morning and it was my first time at canning anything... I followed the recipe exactly except added more anise because I wanted a very subtle licorice flavor I would probably only add about a half of a tablespoon more then the recipe calls for... It set up perfect and was not watery at all...I used exactly 8 cups to the top of the measuring cup of fruit and got 10 1/2 pints jars...All and all I was very happy with the recipe and jam was very yummy ....
Found the jam too watery. I’d use less water in this recipe...maybe half, just to get the plums stewing. Also, it was too sweet! I added 1 cup less sugar than the Recipe called for and still had to cut the sweetness by throwing in a tbsp of lemon juice. Also, the anise flavour is really subtle. Maybe use more anise than 2. Overall, not a winning recipe.
