Potato, Sausage & Kale Soup
I let my young son pick out seed packets and he chose kale, which grew like crazy. This hearty soup helped make good use of it and rivals a restaurant version that we love.

I love sausage and potatoes in soup. To speed up the cooking and avoid scorching the milk I usually cook the potatoes with the sausage before you add your liquids. It does shorten up the cooking time.
This is such an awesome soup and easily adapts to what you have in your kitchen. No worries if you have heavy cream, half and half, chicken broth, different kinds of sausage! One variation we love is to make it with andouille sausage, diced, and fresh spinach. We are much more likely to use those items for other things. It makes the perfect amount of heat if you love spicy soup.
1st ingredient on the list is pork sausage why in the hell does everyone use chicken seasoning with pork Get with the 21st century. There is pork seasoning out there all you have to do is look and that's the last I am going to say about that I making this right now and I put a little twist on it I making mine like the Olive Garden does. they sliced there potatoes like fry potatoes with the skins on
Love this soup! Not too thick, not too runny. Easy to make and very tasty.

I added some red pepper flakes
i used one russet and one red potato. i mashed about 1/2 of the russet to thicken since they break down easily when cooked. used 3 cups chicken broth and 1 cup heavy cream. left out the cornstarch. Excellent. its a definite go-to around here now.
Delicious. I skipped the cornstarch step and added white beans.
This is a wonderful Italian soup. It's much better using Italian Sausage instead of plain pork sausage and 4 slices of cooked bacon cut in 2 inch pieces. Replace the milk with 3 cups of chicken broth along with 1 cup of heavy cream. Kale can be replaced with fresh spinach. Sprinkle with Parmesan before serving.
