To prepare dough by hand: Dissolve yeast in warm water (110° to 115°). Combine the pumpkin, butter and sugar. Add milk powder, cinnamon, nutmeg, salt and ginger; mix well. Stir in enough flour to form a soft dough.
Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, 1 hour.
Punch down dough. Turn onto a lightly floured surface. Shape into a loaf. Place in a greased 9x5-inch loaf pan, seam side down. Cover; let rise in a warm place until almost doubled, 30 minutes.
Preheat oven to 350°. Bake until golden brown, 25-30 minutes.
