DELICIOUS! I did double wine/stock for more sauce and was happy I did. Even so, it could use a bit more. I tripled the lemon juice because I like the citrus punch and also added fresh mushrooms. So good! I have this every week and make a double batch for left overs!
Very good. For a bit more sauce next time I'll use 1/2 cup stock/wine & 2 tbsp lemon juice
this was very tasty. However, I like a good amount of sauce and had to nearly triple the chicken stock, which I use instead of wine. I did not have fresh parsley so used dried and it did add a bit of flavor to the chicken/sauce. The prep time took about 20 minutes or so and definitely add more stock or wine to the recipe. The chicken was nice and tender.
This looks fabulous! I would make a couple of changes. I don't like chicken breasts, but I do happen to have boneless skinless chicken thighs in my freezer. I'm stuck for a meal for later on this week, so I think I just got bailed out! Thanks to the other commentor who suggested adding capers. I'm thinking pasta carbonara as a side. I really like veal piccata, but I've had a hard time getting good veal lately, so I am just going to go with the chicken. I have taken the liberty of giving this five stars, because I seriously doubt that I will have a problem with this.
I'm always looking for quick chicken dinner recipes. This one was quick, easy, and had a lot of flavor. I served it with no yolk noodles and used the drippings from the pan to drizzle over the noodles. My husband who is a meat and potato with gravy person really liked the taste and gave me a thumbs up!
Great recipe for a week night. Easy and hubby loved it.
Very flavorful dish. I'm always looking for chicken dishes. We eat a lot of chicken. I served with mashed potatoes. So good.
