Ingredients

  • 1 boneless pork loin roast (2-1/2 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon ranch salad dressing mix
  • 2 teaspoons Dijon mustard
  • 1 garlic clove, minced
  • 1/2 teaspoon pepper

Directions

  1. Preheat oven to 350°. If desired, tie pork with kitchen string at 2-in. intervals to help roast hold its shape. Combine the next 5 ingredients; rub over roast. Place on a rack in a shallow roasting pan. Pour 1 cup water into pan.
  2. Bake, uncovered, until a thermometer reads 145°, 50-55 minutes. Let stand for 10-15 minutes before slicing.

Can you freeze Ranch Pork Roast?

Freeze cooled sliced pork and vegetables in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, gently stirring and adding a little broth or water if necessary.
