Raspberry Refresher

    Prep: 10 min. Cook: 20 min. + chilling

Ingredients

  • 8 cups fresh or frozen raspberries, thawed
  • 1-1/2 cups sugar
  • 2/3 cup cider vinegar
  • 2-1/2 cups cold water, divided
  • 2 liters ginger ale, chilled

Directions

  • In a large saucepan, crush the berries. Stir in sugar, vinegar and 1/2 cup water. Bring to a boil; reduce heat. Simmer, uncovered, for 20 minutes. Strain to remove seeds; refrigerate. Just before serving, stir in ginger ale and remaining water. Serve over ice.

    I used to make a very similar recipe for raspberry punch and just as a tip I will tell you that straining out the raspberry seeds is much easier AFTER you add some of the ginger ale or sparkling water or whatever, otherwise it's pretty thick and doesn't want to go through the strainer that's actually small enough to strain out those seeds!

    The first time I made this I thought it had too strong of a vinegar taste also. The next time I made it I did less than half of the vinegar. We liked it this way much better but it still has a hint of the vinegar taste in it. Not sure what the vinegar is to do in here either but I think I will try and cut it back a bit more.

    I have a question about this one. Is the cider vinegar necessary? I made this drink and it has a very strong vinegar taste. I might try it again without any vinegar, replacing it with water. Any thoughts, anyone?
