Rice Croquettes
As a newlywed, I used to agonize over meal preparation. Now I enjoy trying new recipes, and some - like this tasty side dish - turn out to be very popular with my family. These croquettes are crisp and golden and add some fun to a simple dinner like roast chicken and salad.

I liked these, but they were a lot of work and made a big mess of the deep fryer. My husband thought them bland so I won't be making them again.
As a child I used to help my mom make these rice croquettes. The only difference is that she added cheddar cheese in addition to the parmesean which gave it a wonderful, cheesy flavor. She also deep fried them. I am so glad to have finally found the basic recipe!
I'm using this rice croquettes recipe as the basis for a side dish to go with a small pork tenderloin roast.There was pork fried rice leftover from a previous dinner, so I took it out of the freezer to make the croquettes.Tastes wonderful!
I saw this recipe from Lucia in the Taste of Home magazine many years ago (around 12?). Anyway, I tried it and my family absolutely loved it. I have been making it ever since, and if you ask all 3 of my kids "what is your favorite thing your Mom makes for you", I quarantee the unanimous answer would be "rice croquettes". I have tons of recipes and honestly, if I had to choose my favorite staple, this would be it. I am surprised that nobody has rated it yet...please try it because it is an awesome recipe.
