Roasted Asparagus

Since asparagus is so abundant here in spring, I like to put it to use with this tasty recipe. Not only does it come together quickly, but it calls for just a handful of items. We all look forward to this side dish each year. —Vikki Rebholz, West Chester, OH

Ingredients

  • 4 pounds fresh asparagus, trimmed
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup sesame seeds, toasted

Directions

  • Preheat oven to 400°. Arrange asparagus in a single layer in 2 foil-lined 15x10x1-in. baking pans. Drizzle with oil. Sprinkle with salt and pepper. Bake, uncovered, until crisp-tender, 12-15 minutes, turning once. Sprinkle with sesame seeds.

    Not sure how such a simple recipe could be so good, but it really is. The sesame seeds sure added a lot.

    This is a quick easy recipe that we loved. Only 4 ingredients but the asparagus was delicious. An easy, uncomplicated recipe. Sometimes those are the best kind. I highly recommend this recipe. Volunteer Field Editor

    I love roasting vegetables and this recipe is a keeper/repeater. It's incredibly easy but full of flavor.

    My whole family loves this roasted asparagus. This is easy, tasty and definitely we will make again and again. Second time I made it , I reduced the time to 10 minutes. We like it a little crisper, but it is still good at the longer time.
