Roasted Potatoes

  • 5 large potatoes, peeled and sliced
  • 1 cup chicken stock
  • 1 teaspoon garlic powder
  • Pepper to taste
  • 4 tablespoons butter


  • Place potatoes in a greased 13-in. x 9-in. baking pan. Combine chicken stock, garlic powder and pepper; pour over potatoes. Dot with butter. Cover and bake at 400° for 1 hour and 15 minutes. Remove cover during last 15 minutes to brown.

    Very easy and tasty!It used things I always have on hand. Very hardy and inexpensive.

    My kids seemed to like the potatoes, but I didn't care for them. They did not have much flavor and seemed pretty dry. I like the idea of adding some Parmesan and other seasoning.

    Very Simple. I liked them. My son loved them. My daughter didn't like them. My husband didn't say, LOL. I put the potatoes in the pan and tossed them with a little olive oil before adding the chicken stock. Didn't have any sticking problems. Next time I will add more garlic, perhaps basil, or maybe go a different route and add Parmesan the last 15 minutes of baking or so. Good base recipe. Then just play around with what you like :)

    This recipe was was quick and easy to prepare, but the potatoes really stuck to the dish even though I greased it very well and they didn't get brown or crispy like I expected them too.
