Root Beer Glazed Chicken

My husband made some tweaks from the original recipe to suit our tastes and it was fabulous. Our 18 month-old son even loves this chicken recipe! It's the perfect way for me to get out of cooking for a night. —Stacy Kolojay, Streator, Illinois

  • 4 boneless skinless chicken breast halves (6 ounces each)
  • 2 tablespoons canola oil
  • 1 cup root beer
  • 1/2 cup packed brown sugar
  • 1/4 cup ketchup
  • 4 teaspoons Dijon mustard
  • 2 teaspoons grated lemon zest


  • Flatten chicken breasts slightly. In a large skillet, cook chicken in oil for 4-6 minutes on each side or until a thermometer reads 170°. Remove and keep warm.
  • Stir the root beer, brown sugar, ketchup, mustard and lemon zest into the skillet. Bring to a boil. Cook and stir for 6-8 minutes or until thickened. Return chicken to skillet; heat through.

    Needed to find different ideas for chicken. Came across this recipe. Rootbeer? What the heck , worth a shot. Man oh man This is amazing!!!!. Used half of lemon zest and half of the lemon juice. Will be having this again. Im considering using the glaze as a marinade for pork chops and to glaze a ham.

    We made this recipe last night and it was not a hit. I think 2 tsp of lemon zest was 1 tsp too many. The chicken was perfect but the sauce left us all kinda eh. It's edible just not noteworthy. I served it with steamed carrots which was a great pairing for the sweet sauce. We won't be making this again.

    I didn't have any lemon zest so I just squirted in some lemon juice. The chicken was so moist and the sauce was sweet and flavorful.

    We used Teddy's rootbeer, I didn't have a fresh lemon for zest so used 1 Tbs of Italia lemon concentrate plus one whole snack pack of Oceanspray Orange Crasins. I pan seared chicken tenders strips, then transferred to plate and put sauce in pan brought to boil then lowered heat to thicken and partially reduce the sauce. Then I transferred chicken to fireproof glass dish and poured all sauce over it and put in a 325 degree toaster oven for 30 min. I served over white rice steamed with sea salt, pepper, butter, and a side of garlic green beans. My husband and I both really liked this dish. It reminded us of a type of chutney. We will make again!

    Delicious. Served with rice. Could not tell that there was root beer. Will try Luigimon idea next time and will bake for a good glaze.

    Yummy, my husband and I really enjoyed it. That makes two stars. It was easy to prepare and I will continue to make it. That gives it two more stars. If it is that good already it deserves to be a five star.

    Yummy!!! We slow baked them in the oven at about 325 so we could glaze them and get a good glaze going. Very good and will make it again!
