Sausage and Pancake Casserole

Trial and error made this pancake casserole recipe one my family asks for time and time again. It's so easy and very good. —Ethel Sanders, Oklahoma City, Oklahoma

  • 1 pound bulk pork sausage
  • 2 cups biscuit/baking mix
  • 1-1/3 cups 2% milk
  • 2 large eggs
  • 1/4 cup canola oil
  • 2 medium apples, peeled and thinly sliced
  • 2 tablespoons cinnamon sugar
  • Maple syrup


  • Preheat oven to 350°. In a large skillet over medium heat, cook and crumble sausage until no longer pink, 5-7 minutes; drain. Mix biscuit mix, milk, eggs and oil until blended; stir in sausage. Transfer biscuit mixture to a greased 13x9-in. baking dish. Top with apples; sprinkle with cinnamon sugar. Bake until set, 30-45 minutes. Serve with syrup.
  • To make ahead: Refrigerate, covered, several hours or overnight. To use, preheat oven to 350°. Remove casserole from refrigerator; uncover and let stand while oven heats. Bake as directed, increasing time as necessary until a knife inserted in the center comes out clean.

    My first instinct was to run screaming when I saw this was perfected through trial and error. I really feel sorry for the husband and kids that had to endure the errors. After making this recipe I truly believe the family was sooo sick of the errors they buckled and said they loved this recipe and once a month they grin and bear this casserole again. I made exactly pretty much by the recipe and what I ended up with was a Bisquick soggy mess, had to toss in the fire pit because I was afraid to put in the trash in case any wild animals got into it for fear of the animals dying and me getting arrested for animal cruelty,

    Can't help but be curious why this is called Sausage and Pancake casserole when there's no pancakes... LOL Really should be called Sausage and Apple Biscuit Casserole, but then--the apples and their toppings aren't even listed in the ingredients... I'm sure it was just an overlook by the author, but it certainly confused me at first. Glad I read the recipe directions before I start baking it! I'm thinking a layer of pancakes on top of the sausage mix and then top them with the apples would be extra delicious! ??
