Sausage Hash

My husband made this for me for Mother's day. It was so tasty, with the addition of scrambled eggs and a side of biscuits.
Try Jimmy Dean Skillets in the "sausage" variety, in your grocer's frozen food aisle. It's got the sausage, peppers, onion and potatoes. To make one serving, I heat a little oil in an 8" skillet, then add 1/3 cup of the mixture, cooking over medium heat until everything is nicely browned. Using a silicone spatula, I then scoot everything over to one side of the skillet and then I pour in 1 egg that I've beaten with a little milk or half
I tried this recipe for breakfast with cheese and eggs. It was delicious!
This recipe is excellent exactly as written - don't change/substitute anything when making it. Oh wait, with one small exception. I used canned, diced potatoes instead of fresh. It saved time and the flavor wasn't impacted. Thank you for sharing this quick and satisfying recipe, Virginia!.

This was a really flavorful hash. I put it on warmed tortilla shells for a quick breakfast burrito!
Used Italian sausage & used spinach instead of green pepper. Also served with a fried egg on top! - a delicious, quick weeknight meal!
