Sausage Spanish Rice

My husband and I both work the midnight shift, so I'm always on the lookout for slow cooker recipes. This one couldn't be easier. We often enjoy it as a main course because it's so hearty, but it's also good as a side dish. —Michelle McKay, Garden City, Michigan

Ingredients

  • 1 pound smoked kielbasa or Polish sausage, sliced
  • 2 cans (14-1/2 ounces each) diced tomatoes, undrained
  • 2 cup water
  • 1-1/2 cups uncooked converted rice
  • 1 cup salsa
  • 1 medium onion
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped sweet red pepper
  • 1 can (4 ounces) chopped green chilies
  • 1 envelope taco seasoning

Directions

  • In a 3- or 4-qt. slow cooker, combine all ingredients. Cover and cook on low for 5-6 hours or until rice is tender.
Nutrition Facts
1-1/2 cups: 401 calories, 21g fat (7g saturated fat), 50mg cholesterol, 1495mg sodium, 40g carbohydrate (8g sugars, 4g fiber), 13g protein.

    I substituted cooked ground turkey for the kielbasa. It was done after 4 hours and the rice was mushy. I followed the recipe exactly.

    I think this would be better with some browned chorizzo instead of polish sausage.

    This comment is specifically for Josie. This recipe does not use instant rice. It uses uncooked converted rice. I suggest your look u converted rice to see what it really is. On another note, I agree with Chris about the use of Kielbasa and Polish sausage. This sounds more like a mixed marriage. How about you sub chorizo for the sausage.

    joscy -- this recipe calls for "Converted Rice" which is not the same thing as "instant rice".

    Yeah... no.I, for one, cannot be bothered to make a "Spanish Rice" recipe that calls for Kielbasa, Polish Sausage and Taco Seasoning. Let's all just empty our shelves and call it ethnic, huh?

    Tasty. Left out the green chilies . Had one child that liked it and one that didn't. Think I would try a different meat in it. Very flavorful.

    My husband and I really enjoyed this. I left out the green chillies because we don't care for too spicy hot and added more saugage. It was very good. Easy to put together. Will certainly keep it in my recipe collection.

    Excellent flavor! I made it on the stove top instead. Cooked the rice per package instructions.; Sauteed the veggies in oil first; combined all but the rice and simmered, then stirred in the rice. Have made this twice and hubby loves it, too!

    Made this for the first time last night to take to a pot luck. Thankfully, I made a batch of cookies as a back up since I had never made this before. This is so very much not to my liking - way, way too tomato-y and followed the recipe exactly. I live in the Southwest and have never tasted "Spanish rice" that tastes like this. Maybe what we have here is "Mexican rice". Just wasn't salvageable so took the cookies instead. This went in the garbage. Also, may I suggest, instead of using a vaguely stated ingredient, as in "salsa", specify a brand. Maybe that would have helped, even though I like the taste of the salsa I used. There are so many brands, each with their own flavor, that it leaves one at a loss as to which kind to use.
