Sausage & Vegetable Skillet Dinner

I threw this sausage recipe together one night to use up produce before going out of town. Who knew it was going to be such a hit! Now it’s a recipe I turn to whenever time is tight. —Elizabeth Kelley, Chicago, Illinois

Ingredients

  • 1 tablespoon olive oil
  • 1 package (12 ounces) fully cooked Italian chicken sausage links, cut into 1-inch pieces
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 1/4 teaspoon crushed red pepper flakes
  • 1-1/2 pounds red potatoes (about 5 medium), thinly sliced
  • 1 package (10 ounces) frozen corn
  • 1/4 teaspoon pepper
  • 1-1/4 cups vegetable broth
  • 2 cups fresh baby spinach

Directions

  • In a 12-in. skillet, heat oil over medium-high heat; saute sausage and onion until onion is tender. Add garlic and pepper flakes; cook and stir 1 minute.
  • Add potatoes, corn, pepper and broth; bring to a boil. Reduce heat to medium; cook, covered, until potatoes are tender, 15-20 minutes. Stir in spinach until wilted.
Health Tip: Italian chicken sausage has less than half the fat of regular. It’s lean, but it adds a lot of flavor.

    Delicious! I've put my own spin on it and tried different meats and herbs/veggies/spices but this is one of my go to recipes. So easy and so comforting on a cold winter night. Thanks for sharing!

    I have a big family and so I added extra of all the ingredients to make a huge pot! Everything was gone! I've made it with different flavors of chicken sausage and it's always a hit!

    This is just okay. Loved the corn but way, way, wayy too many potatoes and the entire thing is very "heavy" due to all of potatoes. Additionally, I feel like this would better halved, as a side dish. It made A LOT and to be honest, I doubt we'll finish it all.

    To Arch1, not sure where you live, but raw chicken sausage abounds from Walmart to Sprouts to Natural Grocers and every store from Arkansas to Oregon!! Get out of the packages meat section and look where the real meat is. To UncleBen1630, yes you definitely could use raw chicken sausages. Cook them with their "skin" still on, when they're done cut it off and slice into 1" pieces and follow the recipe as directed. I used chicken bone broth, one leek in place of the onion, including the more tender parts of the green, added carrots sliced into circles, and chopped Kale, plus the rest ther recipe calls for. Spice wise I used Smoked Paprika, fresh ground black pepper, Himalayan pink sea salt, and at the very end I added two tsp of fresh chopped Thyme. I served this with Cheddar Garlic Butter biscuits that are light, fluffy and delicious!

    Fabulous! My husband loved it. I couldn't find cooked Italian Chicken sausages so I used Hillshire farms smoked chicken sausages. I also forgot to purchase vegetarian broth so I used chicken broth! My husband loved it! He wants it again. So I say it is terrific and easy to make.

    I’ve made this recipe for years, I just use what ever is left in the vegetable drawer, and what ever sausage I have bought on sale at the store, celery, grated carrots, sweet peppers, potatoes, green beans, peas you name it it can go in the pot!! My famiily loves it and they never get bored as it’s always a little different!

    I love a meal that can be made in one pot/pan. I especially liked the vegetables that were added.. This is a great dish for practice/game night. Easy to make and comes together easily. I used Italian sausage, so I did cook the sausage a little bit longer.
