Scalloped Cheese Potatoes
"Mom decided to devise her own recipe for scalloped potatoes, and she cooked up a winner with this one. There was never a morsel left in the serving dish! The flavor of mushrooms gives the potatoes a unique taste that's compatible with the Poor Man's Steak." &Mdash; Dorothy Bowen, Thomasville, North Carolina

I love this version. My mom made a variation of this every Christmas. She would add 1/3 can of milk to the soup, season with S&P and layer. Soup - just enough to have a transparent layer for the potatoes to sit on, potatoes, soup then cheese. Repeat layering until you end up with a top layer of cheese. I think combining the potatoes with the soup is a marvelous idea and I shall be trying it out for our Christmas dinner. I agree with another comment that the cheese is naturally oily and does not need the addition of butter, assuming you cover with a large amount of cheese. If you scatter your cheese then the addition of butter is worth it. It will protect your potatoes from drying out, add loads of flavor - the good kind that only butter can achieve, and give you those perfectly crispy browned bits of potato and cheese, yumm!

We really liked these. Easy to put together and yummy. I am generally not a fan of scalloped potatoes but these were very good. Thank you for sharing! I will definitely make these again.
Super super side dish. I forgot the butter but it still turned out fantastic. Thanks for this keeper

SUCCESS!!! This was easy to make and the family Put. It. AWAY! Great recipe. I did mix the cheese in with the potatoes and soup mix, and nixed the butter. DELICIOUS!
This is a tasty and easy dish. It's also very adaptable. I only had one can of cream of mushroom, so I used that and cream of celery. I also added onion, garlic, and used a bag of of triple cheddar cheese blend. This dish went well with our ham dinner.
This dish is great! It was simple and very tasty! The only thing I would not add next time is the butter dotted on the cheese layers. The cheese is greasy enough. I also would try to add onions and/or green peppers.
First of all I had to cut the recipe in half for my husband and I and still had enough for another meal. Also I used cream of chicken instead of the mushroom. Instead of layering the cheese I mixed it in with potatoes and soup plus I cut up onion and added that tool. We loved it!!!!!
Delicious and easy
