Scalloped Mocha Cookies
Total TimePrep: 30 min. + chilling Bake: 10 min./batch
Used these as a base for Halloween cut-out cookies. Flavor is fantastic! Mine stayed soft, but I think another minute or two in the oven above the recommended time would have given me a crispier edge. Chilling for an hour wasn't enough in my case - it took more like 4 for the dough to get to the consistency I like for rolling out. I didn't have any spreading or lose the shape from any of my cookie cutters after letting chill for the extra time. Will be making them again!
Flavor was fine, however these did not retain their scalloped shape after baking, and i only got about 3 dozen cookies after rolling the dough 1/4 inch thick and using the 2 1/4 inch cutter specified in the recipe.

What a good mocha flavour these cookies have... and slightly crispy but not crunchy! I usually stick to drop cookies and am not too brave trying different flavours but these were so good I've changed my mind :) The dough was easy to roll out too, after chilling.
