Simple Lemon Parsley Potatoes

For a simply delicious side dish, I often prepare these potatoes. I like the fact that there are few ingredients and they take such little time to prepare.—Dorothy Pritchett, Wills Point, Texas

  • 3 pounds small new red potatoes, quartered
  • 1/2 cup butter, melted
  • 3 tablespoons lemon juice
  • 3 tablespoons minced fresh parsley


  • Cook potatoes in boiling salted water until tender, about 15 minutes; drain. Combine butter, lemon juice and parsley; pour over the potatoes and stir gently to coat.

1 cup: 150 calories, 8g fat (5g saturated fat), 20mg cholesterol, 84mg sodium, 18g carbohydrate (1g sugars, 2g fiber), 2g protein.

    A lovely, simple side dish for a chicken or fish meal, and leftovers can be served cold as a potato salad.

    Very simple yet a great addition to so many meals. I am an onion fiend so I added some chopped red onion, still delicious.

    I only used 1 tbsp of lemon juice and 1/3 cup parsley. Delicious and so easy!~ Theresa
