Slow-Cooked Sauerkraut Soup
We live in Lancaster County, which has a rich heritage of German culture. Our dishes often include sauerkraut, potatoes and sausage. We enjoy this recipe on cold winter evenings, along with muffins and fruit. —Linda Lohr, Lititz, Pennsylvania

This is excellent! I did substitute cream of chicken soup for the cream of mushroom since we didn't have any on hand. I'm thinking next time I'll make this with smoked turkey sausage!
Absolutely delicious!! My wife doesn't like sauerkraut, but loves this soup. I've made it twice now and both times it was a hit. As one reviewer suggested, the packaged kraut from the deli is a bit tastier as it seems to be more tangy. Just for kicks, add a couple tablespoons of sour cream to your individual bowl of soup. It gives it a unique taste that complements the other flavors. Then wait a couple hours and hop on the treadmill.

This recipe is great!! One change I've made is to use the packaged kraut found in the deli case at the grocery store. It is less bitten than canned. Other than that, Grandma Leilich would say, "Heerlijke soep !!"
I love this recipe!
Very tasty soup. I scaled it for the two of us, and subbed broccoli stems (diced), and left out the chicken and bacon. Also, since I prefer not to use canned soup, I made a white sauce and spiced it up some. I'll make this again - always looking for good slow-cooker recipes. :)

Here's how I changed it...I used homemade sauerkraut, drained, but not rinsed, 15 oz. I made a homemade substitute for the mushroom soup that I found online. There are bad things and a lot of sodium in canned mushroom soup concentrate. Used apple cider vinegar, because that's what I had. No PEPPER. I hate black pepper...it's me, not you. No bacon garnish. Didn't need it. I used grass-fed, already-cooked kielbasa and already cooked chicken breast from Costco.. NEXT TIME: I will not add the cooked meat until about four hours into the cooking process. The kielbasa was "overcooked" as it was already cooked. But, hey, live and learn. It was SO delicious. I don't usually cook because I work and hubby is retired so he does all of the cooking. He's good and so why should I? But I thought, "I think I can do this." I have to say...it's GOOD! He went back for seconds and that pretty much never happens when I cook. So...THANKS!! This recipe is really great!! BUT BUT BUT...if you don't like sauerkraut, you're NOT going to like this. Don't criticize if you don't like sauerkraut. It's called "sauerkraut soup" for goodness sake!! :O)
Make this with ham rather than sausage. Very dissapointed! Rinsed sauerkraut as directed but sauerkraut taste was overwhelming. Both my husband and I like sauerkraut but not like this. Won’t recommend or make again!
