Slow-Cooker Cheddar Bacon Beer Dip

My tangy, smoky dip won the top prize at our office party recipe contest. Use your favorite beer or ale, but steer clear of dark varieties. —Ashley Lecker, Green Bay, Wisconsin

Ingredients

  • 18 ounces cream cheese, softened
  • 1/4 cup sour cream
  • 1-1/2 tablespoons Dijon mustard
  • 1 teaspoon garlic powder
  • 1 cup amber beer or nonalcoholic beer
  • 2 cups shredded cheddar cheese
  • 1 pound bacon strips, cooked and crumbled, divided
  • 1/4 cup heavy whipping cream
  • 1 green onion, thinly sliced
  • Soft pretzel bites

Directions

  • In a greased 3-qt. slow cooker, combine cream cheese, sour cream, mustard and garlic powder until smooth. Stir in beer, cheese and all but 2 tablespoons bacon. Cook, covered, on low, stirring occasionally, until heated through, 3-4 hours.
  • In the last 30 minutes, stir in heavy cream. Top with onion and remaining bacon. Serve with soft pretzel bites.

  • To lighten this up, use reduced-fat cream cheese, light sour cream, half-and-half and reduced-fat shredded cheese. Serve with fresh celery and carrot sticks.

      I go to a lot of potluck events. I can see taking this; however, I am not prepared to buy a 3-quart slow cooker for it. Thanks to the commentor who said they did it in the oven. I would be inclined to do it at about 300°F, low and slow.

      Making this for a party of 20 or so...should I double it?...or is 3qts enough.

      I made half a batch of this....but...I should have made the whole thing. It was gone INSTANTLY. I served it with another Taste of Home recipe - Soft Beer Pretzel Nuggets. I made exactly as written. You MUST make this. The flavor was amazing, with the pretzels I made, and even a veggie platter. Everyone loved it.

      I didn't use a crock pot, just made it in the oven instead. Good flavor overall, but I would use a milder beer next time. Added more garlic powder and some paprika too.

      Oh my goodness, this recipe was a hit. I baked freezer pretzels, cut into bite sized pieces, instead of the pretzel buns. Will definitely make again!

      I made this for Thanksgiving and had to hand the recipe out to more than one person. I served it with pretzel cornbread. It was awesome.
