Strawberry-Carrot Smoothies

My children resist veggies, but they love smoothies. This one packs in lots of good-for-you fruits and veggies—but to my kids, it's just a super delicious breakfast. —Elisabeth Larsen, Pleasant Grove, Utah

  • 2 cups reduced-fat plain Greek yogurt
  • 1 cup carrot juice
  • 1 cup orange juice
  • 1 cup frozen pineapple chunks
  • 1 cup frozen unsweetened sliced strawberries


  • Place all ingredients in a blender; cover and process until smooth.

1 cup: 141 calories, 2g fat (1g saturated fat), 5mg cholesterol, 79mg sodium, 20g carbohydrate (15g sugars, 1g fiber), 10g protein. Diabetic Exchanges: 1 fruit, 1/2 reduced-fat milk.

    These were great! I used 3 single serving size containers of yogurt. Now I wish I'd bought a large container so I could make them again tonight!
