Strawberry Lemon Cupcakes

My granddaughter Sydney has acquired a love of baking. While I was visiting her in Tampa, we made these light, fluffy cupcakes. She's a natural—these turned out fantastic! —Lonnie Hartstack, Clarinda, Iowa

  • 1 package white cake mix (regular size)
  • 3 large eggs, room temperature
  • 1/2 cup 2% milk
  • 1/3 cup canola oil
  • 2 tablespoons grated lemon zest
  • 3 tablespoons lemon juice
  • 4 cups confectioners' sugar
  • 1 cup butter, softened
  • 1/4 cup crushed fresh strawberries
  • Additional fresh strawberries


  • Preheat oven to 350°. Line 24 muffin cups with paper liners.
  • In a large bowl, combine the first 6 ingredients; beat on low 30 seconds. Beat on medium 2 minutes. Fill prepared cups half full. Bake until a toothpick inserted in center comes out clean, 18-20 minutes. Cool in pans 10 minutes before removing to wire racks to cool completely.
  • For frosting, in a large bowl, combine all ingredients, except additional strawberries; beat until smooth. Frost cupcakes. Garnish with additional strawberries. Store in the refrigerator.

    I tried, just the cake part for the cupcakes. Pretty Good! I chose out of my personal preference our own recipe I use for the frosting. My frosting is made with heavy whipped cream, and I add vanilla, powdered sugar

    As soon as I read cake mix I was hesitant...but when I came to canola oil I said definitely not!! Canola oil is terrible and there is nothing good in a cake mix. Cook with good healthy ingredients or forget it!!

    I haven`t made this recipe yet, but I plan to and will comment when I have taste-tested it. I checked the recipe against the (BC) white cake mix I have at hand, and there seems to be a discrepancy. My cake calls for one cup of water, three eggs and one-third cup of oil, Even with the half-cup of milk and the three tablespoons of lemon juice, that is less than five-eighths of a cup of liquid. When I make this recipe, I will add a three-eighths cup of water and see how it turns out.

    These are very good! I saw another review saying they were very dry, well they must have made a mistake these were very moist and delicious. Thanks for a great recipe!

    Hi. I didn't put any stars because I haven't made these. Just was going comment. If the girl is just learning to bake don't critics the fact that she used a box mix. Let kids get comfortable in the kitchen first, after that they will be more adventurous in cooking. I'm going to make these with the ingredients she has! Keep up the good work and don't get discouraged, I've made plenty of mistakes but didn't let it stop me. I do bake a lot from scratch and boxed mixes????

    waltpat4life just save your opinion. Its just a recipe for goodness sake with a cake mix. If you don't like it, move on to another one you prefer, don't comment. Simple

    Please don’t let this turn into every other social media outlet for people to take a political or way of life stance. Rate the recipe and don’t rate the people on their choice of an ingredient. I didn’t try this recipe but I am a five star supporter of being nice and showing compassion.

    For me, any recipe that includes the words “cake mix” becomes less than what it should be and boring to make. An automatic three star deduction.

    The cupcakes were very dry. I gave it a three because the frosting was good. I don't think I would make the cupcakes from this recipe in the future because it was too dry and not a moist cupcake.
