Sugarless Fruit/Nut Muffins
Once you've tasted these deliciously sweet, chewy gems, you'll be making them again and again. They freeze well, too, for a quick anytime snack!
Ingredients
- 1 cup chopped dates
- 1/2 cup raisins
- 1/2 cup chopped pitted dried plums (prunes)
- 1 cup water
- 1/2 cup butter, cubed
- 1/4 teaspoon salt
- 2 large eggs, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 cup chopped nuts

These are delicious and no guilt for having a few with a glass of milk. I make my own applesauce and wonder if I could sub 1/4 cup for the butter. Time for mini muffins is 13 min; my oven temp is closely monitored. Nothing worse than a dry muffin! I used part dried cranberries with the dates. I made 12 mini muffins and one 8x8 pan (16 min). Perfect! Got milk?
