Sunday Chicken

This was my mother's favorite recipe for Sunday—hence the name. It makes an excellent recipe for Sunday dinner, because it can be prepared ahead of time and left to bake while you attend church. The leftovers also freeze well. —Don Harksen, Dothan, Alabama

Ingredients

  • 1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
  • 1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
  • 1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
  • 1/3 cup butter, melted, divided
  • 1-1/4 cups quick-cooking rice
  • 1 broiler/fryer chicken (3 to 4 pounds), cut up
  • Salt and pepper to taste
  • Paprika

Directions

  • Preheat oven to 350°. In a large bowl, combine soups, 1/4 cup butter and rice. Pour into a greased 13x9-in. baking dish. Top with chicken pieces. Drizzle chicken with remaining butter. Sprinkle with salt, pepper and paprika.
  • Bake, uncovered, 2 hours or until chicken juices run clear and rice is tender.

    I make something very similar to this. I use chicken thighs, legs, etc not cut up just arrange on top of rice mixture. Cook covered with foil for 45 min and then remove foil to brown the chicken. This helps cook the rice faster and kros Chechen from getting dried out.

    Far too greasy. Chicken with skin should not be topped with melted butter. I just don't understand why butter is used to coat the dish, in the soups and rice and then poured over the chicken.

    I make this all the time!! I use Breast meat!! I get 2-4 breasts and 3 inch pieces and place it on the top of the rice, and gook it for 45 minutes to and hour! Love it! (Not a big fan of dark meat)

    Love this recipe. I used thighs and I browned them before baking 2 hours.

    Made this using chicken leg quarters, added 1 tbsp ranch dressing powder, 2 tbsp dried minced garlic and 1/4 tsp garlic powder. Husband and son especially loved the rice. Will make this again and did bake 2 hours.

    2 hours at 350? seems like an awfully long time to bake chicken. For those of you who have made this did you bake it the full 2 hours? This recipe sounds very good and I'd love to try it but I'm unsure about the baking time. Thanks in advance!
