Wow! I was a bit nervous about how it would turn out, but glad I decided to give it a try. Really really good. I am so pleasntly surprised, and this comes from a lentil lover!
So very good! I use canned lentils drained. You can really play with this recipe based on what's in your fridge and pantry.
This is my go to taco recipe. My kids actually prefer lentil tacos to meat ones. I've made it with and without the salsa stirred through and it's awesome either way. You can even double it for a big family.
I was a little nervous to try this. But it ended up being the best tacos I’ve had since going vegan!! Definitely give it a try!!

Delicious! Thank you for sharing your recipe. I used a tri-color lentil mix and made it in my Quick Cooker. I used the Sear function to saute the onions, garlic, lentils, and seasonings. Added the broth and cooked 5 minutes on the Beans setting, followed by a 10 minute natural steam release.
It was very filling and smelled so good cooking! My husband said that if I hadn't told him it was meatless he would never have guessed. I didn't bother to mash the lentils, just cooked it till it was soft and broke apart easily.
I'm always looking to switch it up with some meatless options for dinner. These were amazing! I use this lentil filling just as often as I make ground beef filling now. Definitely a 5 star recipe!
