Tex-Mex Pasta

After a recent surgery, I wasn’t able to stock up on groceries. One night, I looked in my pantry and created this. The results were fabulous! —Michele Orthner, Lethbridge, Alberta

  • 2 cups uncooked spiral pasta
  • 1 pound ground beef
  • 1 jar (16 ounces) salsa
  • 1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
  • 1 cup shredded Mexican cheese blend, divided


  • Preheat oven to 350°. Cook pasta according to package directions.
  • Meanwhile, cook beef in a Dutch oven over medium heat until no longer pink; drain. Stir in the salsa, soup and 1/2 cup cheese; heat through.
  • Drain pasta; stir into meat mixture. Transfer to a greased 11x7-in. baking dish. Sprinkle with remaining cheese. Cover and bake until cheese is melted, 15-20 minutes.

    I've made this 3 times now--it's become a part of our regular rotation as we usually have these ingredients on hand. I always season my meat with pepper and garlic powder plus I followed the advice of others and used taco seasoning to my beef. With medium salsa, it's got the right amount of kick. We love it!

    I made this as is, but added 1 more cup of noodles. Very creamy, inexpensive, and quick! I did not feel I needed to heat my oven just to melt cheese, so once I mixed all of the ingredients, I turned off the heat, put a lid on and let it sit for 5 minutes. This is definitely a dish that I will be making again and again!!

    I've made this pasta bake several times using 1 pound of ground beef, 1 pound of pasta, salsa, the soup & I even added a well-drained can of corn. I also use extra cheese, especially on top. I've also made it with half salsa & half mild Rotel. It's delicious! I serve it with a side of Ranch Style beans, sour cream & fresh bread baked in the bread maker. In fact, it's tonight's dinner! I may add some Taco Seasoning just for a different taste. This is definitely a keeper!

    This was a huge hit. Hubby, stepson, grandkids loved it! Simple and tasty. Served with some tortilla chips and sour cream on the side. YUM!!!!

    Surprisingly delicious! I followed other reviewers' advice and used a packet of taco seasoning on the beef, otherwise made it exactly as written. The soup added an appealing creaminess. Also used medium salsa. My husband took one bite and declared it a new Top 10 favorite! Plus it couldn't be easier to make, and was ready in a flash. Thanks for sharing this keeper!
