Tiramisu Cookies

Ingredients

  • 1 cup butter, softened
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon rum extract
  • 2 large eggs
  • 2-1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • FILLING:
  • 1 carton (8 ounces) mascarpone cheese
  • 1/4 cup butter, softened
  • 3 cups confectioners' sugar
  • 2 teaspoons instant coffee granules
  • 1 teaspoon vanilla extract
  • Baking cocoa

Directions

  • Preheat oven to 350°. Cream butter and sugar until light and fluffy. Beat in eggs and extracts. In another bowl, whisk flour, baking powder and salt; gradually beat into creamed mixture.
  • Drop dough by tablespoonfuls 2 in. apart onto parchment-lined baking sheets; flatten slightly with bottom of a glass dipped in sugar. Bake until edges begin to brown slightly, 12-14 minutes. Remove from pans to wire racks; cool completely.
  • For filling, in a large bowl, beat mascarpone cheese and butter until smooth. In a small bowl, dissolve instant coffee in vanilla; beat into mascarpone mixture. Gradually beat in confectioners' sugar until smooth. Pipe or spread filling on bottoms of half of the cookies; cover with remaining cookies. Dust cookies with cocoa. Store in the refrigerator.

    The recipe was to bland and underwhelming. To make it more similar in taste to actual tiramisu I added in 1 Tbs of lemon zest and substituted Cafe Tastle Platinum Expresso Freeze Dried Instant Coffee. (Available from Ebay or Walmart.

    In the TIRAMISU COOKIES recipe, I believe you forgot one of the ingredients (either cinnamon or nutmeg?) with part of the sugar topping put on the cookies with the glass that you're supposed to flattened them with; is that possible?

    This cookie recipe is a great idea, but disappointed on flavor and other difficulties. The cookies need additional rum extract and the filling needs additional coffee. A tablespoon of cookie dough is enough for both sides of the sandwich and mine did not come out beautifully rounded on the top. The mascarpone was delicious in the filling. For a recipe that sounds so promising it did not deliver.
