Not only does this moist and tender meat loaf taste good, it's good for you as well. I like the combination of the beef and turkey.—C. White, Nashotah, Wisconsin

  • 1 large onion, chopped
  • 3/4 cup chopped sweet red or green pepper
  • 2 garlic cloves, minced
  • 2 teaspoons vegetable oil
  • 1 egg, lightly beaten
  • 1/4 cup egg substitute
  • 1 cup soft whole wheat bread crumbs (2 slices)
  • 1/4 cup minced fresh parsley
  • 1 tablespoon minced fresh marjoram or 1 teaspoon dried marjoram
