This reminds me of a dish we made at day camp when I was a kid. Weird as it sounds we chopped up celery carrots apples an put them in a cabbage leaf spread with peanut butter. I am sure there had to be honey and raisins in there too. I think about that walking salad often.
Ingenious idea. However, it can be a little messy to eat, so make sure you wipe all filling off the apple when you make it. Next time I think I'll add some minced celery.
