White Bean ‘n’ Ham Soup

  • 2 cans (15-1/2 ounces each) great northern beans, rinsed and drained
  • 2 medium carrots, diced
  • 1 small onion, chopped
  • 2 tablespoons butter
  • 2-1/4 cups water
  • 1-1/2 cups cubed fully cooked ham
  • 1/2 teaspoon salt
  • 1/8 to 1/4 teaspoon white pepper
  • 1 bay leaf


  • Mash one can of beans; set aside. In a large saucepan, saute the carrots and onion in butter. Stir in the water, ham, seasonings and whole and mashed beans; cook over medium heat until heated through. Discard bay leaf.

    It was good, but I too needed to add celery and italian seasoning

    Excellent with changes: Double the carrots. Cut them 3/4" or longer. Split or quarter thicker carrots. The carrots add color and are sweet in contrast to the saltier beans. Use chicken stock, not water. Just pour in the whole 32 ounce carton, no measuring, no waste. I used precut ham chunks, the kind for pizza topping; one 8 ounce package... no measuring. I used black pepper because I didn't have any white pepper; no other reason. I just ground in a bunch from the grinder (Trader Joes) and a few twists of lemon pepper too, for fun. Serve with cornbread, (TJ mix) butter, dark honey, apple cider (hard or not) or beer. Don't chop the onions too fine. Use lots of onion and remember to add the bay leaf. I used small Great Northern Beans for the mash, but only mashed a little, and Navy Beans (both Goya) for the other, again for contrast. Don't drain the beans, just pour in the cans. Make the cornbread while the onions and carrots saute; everything comes out at the same time.

    This is delicious. However, I add sweet corn to it and don't drain it. And I use chicken broth for the water. It is delicious. I do not add salt because of the broth. Not needed.

    I am making this in a crock pot I will add hard boiled eggs ,chopped potatoes and some chopped celery too.I didn't drain the beans either.

    SO delicious and simple. Like a lot of others, I used chicken broth instead of water and added two good sized pinches of brown sugar to counter the saltiness. Definitely a hit!
